Timothy McCarthy introduces recent discoveries about bitterness. Perception of this flavor via TAS2r receptors is actually our body's alarm system for the immune system. The challenging taste is an indication of toxins, poisons or bacteria and the body needs to know of it's presence. Bitter receptors are there to send signals throughout literally the entire body. This has revelational implications for inflammation, infection and asthma.
In this one hour workshop Tim explores the mechanisms of digestion and the chemistry of bitterness. We will discuss why bitters are necessary for digestion and the havoc that is caused by the lack thereof, with implications for hypertension, hyper/hypoglycemia, hyperlipidemia and obesity, diabetes, indigestion, heartburn, etc.
